RECIPE OF THE MONTH

PUMPKIN PIE OATMEAL

(A GREAT WAY TO USE YOUR DAILY PROTEIN POWDER)

 

 

INGREDIENTS:


  • 1/4 Cup skim milk or low fat soy milk

  • 6 Tbsp water
  • 1/4 cup Old Fashioned oats
  • Pinch cinnamon
  • Pinch nutmeg
  • 1/8 Cup canned pumpkin
  • 1/8 cup sliced almonds
  • Splenda sweetner to taste
  • 1/8 Cup water
  • 1/2 Scoop Vanilla Protein Powder

 

PREPERATION

  •  
    1. In a small pot bring milk and water to a boil over medium heat. Add oats, cinnamon and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed, about 7-10 minutes, stirring occasionally..

    2. Once the liquid is absorbed, stir in pumpkin, almonds and sweetner.
    3. Combine water and protein powder in a seperate bowl. Mix with a fork until protein is dissolved. For a smoother consistency, mix powder with water in a blender until protein powder is dissolved.
    4. Pour protein mixture over oatmeal and serve

**NOTE- You can add raisins or dried cranberries. Sliced bananas are also a great addition!
