It even has fewer digestible carbs than most vegetables. As a source of protein, it is a contender of plant source proteins……and
without the gluten found in wheat.
Coconut flour is high in fiber. It has
a whopping 61% of dietary fiber, which is the highest found in any flour,( wheat bran has 27%). Coconut flour contains 4x
as much fiber as soy flour.
